Hardening: fix _LIBCPP_HARDENING_MODE 

It seems we ended up passing "_LIBCPP_HARDENING_MODE_EXTENSIVE"
(quoted), not just _LIBCPP_HARDENING_MODE_EXTENSIVE. Remove the
quoting.
